Apple cinnamon cookies and Bluckwheat chocolate chips cookies

Apple cinnamon cookies

INGREDIENTS

1/2 sick (4 tablespoons) butter
1 cup fresh shredded apples
1/2 sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 chopped walnuts

PREPARATION

  • In a medium bowl, beat together the butter, the sugar and the fresh apples.
  • Add the vanilla extract, the cinnamon and the ground ginger.
  • Mix well and set aside.
  • In a different bowl, mix together the whole wheat flour, the baking powder and the chopped walnuts.
  • Combine the dry ingredients with the butter mixture until well mixed.
  • Preheat oven to 350 F (180 C) degrees.
  • Using your hands, take tablespoon size portions of the dough and shape them as cookies.
  • Place the cookies on a greased cookie sheet and bake them for 15 minutes.
  • Remove from oven and let them cool down on wire rack for a few minutes before eating.

Bluckwheat chocolate chips cookies

INGREDIENTS

1 stick (8 tablespoons/ 1/2 cup) softened butter (125grs)
1 cup sugar (200grs
2 eggs
1 teaspoon vanilla extract
1 cup buckwheat flour (120grs)
1 cup regular wheat flour (120grs)
1 tablespoon baking powder
1 cup bittersweet chocolate chips
1/2 cup chopped walnuts (50grs)

PREPARATION

  • In a medium bowl, using a fork, slightly beat the butter, sugar, eggs and vanilla extract.
  • In a separate bowl, combine together the buckwheat flour, regular wheat flour, baking powder, chocolate chips and walnuts.
  • Gradually incorporate the dry ingredients to the egg mixture.
  • Towards the end, use your hands to form a ball.
  • Freeze for 30 minutes.
  • Preheat oven to 350 F (180 C) degrees.
  • Remove from freezer and using your hands, form small cookies of about 2″ (4 to 5 cm) diameter.
  • Place the cookies on a cookie sheet 1″ to 2″ apart.
  • Bake in preheated oven for 13 minutes.
  • Remove from oven and let them cool down for 1 minutes before removing form sheet.
  • Let the cookies cool down completely before eating.
